Bread consummation falls by nearly 50 %
The eating habits of Austrians have changed over the past decades. Bread has also been affected by this change. During the 1960s, eight kilograms of bread were consumed per person per month. This is now only 4.7 kilograms.
"Eating bread for dinner and a regular breakfast with bread is becoming less and less common", explained nutrition expert Hanni Rützler at a press conference in Vienna yesterday (Wed).
"The decreasing consummation of bread is presumably due to the fact that there is the prejudice that bread makes you fat." Food allergies in particular have affected Austria’s desire to eat bread.
"There is also the danger that an eating disorder could develop due to their fear", said gastroenterologist Rainer Schöfl from Linz. According to the doctor, 25 percent of the Austrian population are affected by food allergies such as lactose or fructose intolerance, which significantly limit their quality of life.
A study by the Market Institute shows how much the shopping habits of Austrians have changed over the last few years. It also shows how entire branches – bakeries in this case– have suffered.
500 Austrians took part in a phone survey. According to this survey, 46 percent of Austrians buy their bread mostly from the supermarket at the counter. Only 27 percent get their bread mostly from the bakery.
Although bread consummation has decreased, tons of bread is simply thrown away in Austria. "On average, nearly ten percent of the bread products are thrown away", said Felicitas Schneider, Vienna University for Agriculture to wien.orf.at.
